Boneless Tenderloin

A long, cylindrical, boneless cut of meat, obtained from the loin primal, in beef, pork, veal, and lamb. The tenderloin is very tender and one of the most expensive cuts, but lacks the flavor of less tender cuts that contain more fat and connective tissue.
