Me and fish don't always get along. Generally it ends up way over done or way underdone. I've tried salmon, tilapia and orange roughy and I generally bake my fish (small apartment, and I can't use the broiler without the fire alarm going off).
What kinds of fish do you use and what is your cooking method?

I do a tilapia just in a baking dish drizzled with olive oil and a squeeze of lemon juice, salt and pepper. I bake at 350-375 for about 10-15 minutes until it flakes. I also make sure to line the baking dish with tin foil so clean up is easier.

I use cod most often. Sometimes I use my grill pan with olive oil, salt and pepper. This works great for fish tacos. Other times I will boil the fish until it flakes, then place it in a baking dish with butter and seasonings to get some of the liquid off.

Aren't Olive, Canola, Sunflower, etc., all different kinds of "vegetable" oils? My daughter has a recipe that calls for "vegetable oil" and is concerned that the oils we have in the cupboard (above) are unacceptable.

Has anyone dehydrated tomatoes before? I was wondering how to dry them. Do you just dry the tomatoes or do you have to season them or do anything special to them before you dry them? I have had them before and they are great to snack on.
