Fruity Chicken Salad Recipe

This is my wife's fruity chicken salad. We usually eat it with crackers or in pita bread for a quick and easy snack.

4 whole chicken breasts
1 teaspoon garlic - minced
1 teaspoon Tony Chacheres Original Creole Mix (more if preferred)
4 stalks celery - chopped
1/2 apple - sliced, diced
1 cup grapes - halved
1/4 cup pecans - chopped
1 tablespoon sugar
3/4 cup mayonnaise
Boil chicken breasts until fully cooked (usually 10 to 15 minutes).
Cut or shred chicken breasts into bite size pieces.
Turn skillet on high (dry) and pour in minced garlic and let caramelize.
Place chicken pieces in the pan once garlic has browned.
Stir in 1/2 cup of chicken broth from the boiled chicken (or use canned broth).
Cook on high until chicken broth has cooked down and chicken starts to brown.
Turn off heat and stir in the Tony Chachere's mix.
Mix in celery, apples, grapes, pecans, sugar and mayonnaise.
Serve in pita bread or on crackers.
