2 slices bacon
4 shallots - thinly sliced
2 pounds Brussels sprouts - trimmed and halved
1 cup water
1/2 teaspoon salt , divided
1/4 teaspoon black pepper
1/4 cup bread crumbs
3 tablespoons butter
In a large skillet, cook bacon over medium heat until crisp. Remove bacon from pan, reserving drippings; crumble.
In same skillet, increase heat to medium-high and saute shallots in the bacon drippings. Cook until tender, approximately 2 minutes.
Add Brussels sprouts and water; bring to a boil. Cover and cook until Brussels sprouts are almost tender, about 6 minutes. Uncover and remove from heat.
Sprinkle with salt and pepper; toss to combine. Place mixture in a greased baking dish.
In the skillet, melt butter over medium-high heat. Add breadcrumbs; saute until toasted, stirring frequently.
Sprinkle the breadcrumb mixture over Brussels sprouts. Broil 3 minutes or until golden and thoroughly heated.
