Ingredients
  • 3 cups all-purpose flour
  • 1/3 cup white sugar
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 3/4 cup unsalted butter (1 1/2 sticks)
  • 1 cup plain oatmeal
  • 1 teaspoon vanilla extract
Directions
Preheat oven to 400 degrees. In large mixing bowl, mix flour, sugar, baking powder, baking soda, salt and oatmeal. Mix in butter and blend until mixture has the appearance of sand. Finally, mix in the vanilla extract and buttermilk; mix until dough starts to form. (If mixture is still to liquidly, add 1/4 to 1 cup more flour)

Place dough onto a floured surface. Using a rolling pin, roll the dough into a large rectangle about 3/4 inches thick. Use a pizza cutter to cut any size triangles that you wish from very small to extra large.

Place triangles onto a buttered baking pan and bake on middle rack for 10-20 minutes, depending on size of scones (15 minutes for medium size ones). Remove from oven when tops are golden brown and allow them to cool for 5 minutes.
