Zucchini Mushroom "Stroganoff" (Vegetarian) Recipe

  • 1 tablespoon Canola or other Vegetable Oil
  • 1 pound Zucchini, sliced
  • 2 garlic cloves, crushed
  • 4 ounces Mushrooms, sliced
  • 1 teaspoon fresh Basil, chopped (or 1/2 teaspoon dried)
  • 1 can tomatoes, chopped (14 ounce can)
  • 2 ounces Unsalted Cashews
  • 1/2 cup sour cream
  • Salt and Pepper
  • Cooked Rice
Heat oil and gently fry zucchini and garlic for 5 minutes.

Add mushrooms. Cover and cook for 5 minutes.

Stir in basil, tomatoes and cashews. Cover and simmer for 10 minutes.

Stir in sour cream and heat through.

Season to taste with salt and pepper.

Serve over rice.
