Martini Vodka Sauce Recipe

  • 1 stick butter (1/2 cup stick)
  • 3/8 cup top shelf vodka
  • 1 cup favorite homemade or jarred tomato sauce
  • 1 cup grated Pecorino Romano cheese
  • 1 cup heavy cream (or substitute half and half)
  • 1 pound pasta (rigatoni, ziti, mostaccioli)
Melt butter in a medium saucepan; add vodka and simmer gently for 2 minutes until the alcohol dissipates. Add tomato sauce and bring back to a slow simmer. Whisk in grated cheese; add heavy cream and bring back to a slow simmer.

Pour over cooked pasta, toss gently and enjoy!!
