A refreshing homemade pizza that is full of flavor. The oil with garlic and seasonings is the perfect sauce and then topped off with garden fresh tomatoes and fresh mozzarella cheese. Perfect for summertime.

Ingredients
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon balsamic vinegar
  • 1 clove garlic, minced
  • 4 flat pita bread rounds, without pockets
  • 1 pint cherry tomatoes, sliced
  • 1 cup Mozzarella cheese
  • 2 tablespoons fresh basil leaves, snipped

Preheat oven to 425°.

Combine oil, seasoning, vinegar and garlic in bowl and mix well.

Place pita rounds on baking sheet. Brush one side of each round with oil mixture using a pastry brush.

Slice tomatoes, then top pita rounds evenly with tomatoes and cheese.

Bake 10-12 minutes or until cheese is melted and edges are lightly browned.

Sprinkle with basil.

VARIATION: Roast the cherry tomatoes in a 400 degrees F oven with olive oil, garlic, salt and pepper for 12-15 minutes before using as a topping.
