Apple Pie 69 Recipe

  • 4 cups empire and golden delicious apples
  • 3/4 cup sugar
  • 1 tablespoon butter
  • juice from 1/2 lemon
  • 2 tablespoons flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 1/2 cups all-purpose flour, plus extra for rolling
  • 2 sticks or 8 ounce unsalted butter, very cold, cut into 1/2 inch cubes (1 cup sticks)
  • 1 teaspoon Salt
  • 1 teaspoon sugar
  • 6 tablespoons cold milk
Peel apples, slice and core. Add sugar, lemon juice, flour and spices. Allow to stand for half an hour. Combine flour, salt, sugar, add butter, mix until dough resembles coarse meal. Add cold milk 1 T. at a time until mixture just begins to clump together. if you pinch some of the crumbly dough and it holds together, it's ready. If it doesn't hold together, add a little more milk. Separated into two dough balls, and roll. Fill pie crust with apple mixture, and top with crust. Bake 15 minutes at 400°, and reduce oven to 350° and bake for another 35-45 minutes. Note: To keep crust from burning, cover the outer-rim crust will aluminum foil.
