South Georgia Caviar Recipe

Ingredients
  • 2 cans black-eye peas, drained (15 ounce cans)
  • 1 can whole kernel corn, drained (15 ounce can)
  • 1 can diced tomatoes and green chilies (recommend Ro-Tel) (10 ounce can)
  • 2 cups chopped red bell peppers
  • 1/2 cup chopped fresh jalapeno peppers
  • 1/2 cup chopped onion
  • 1 bottle Italian dressing (8 ounce bottle)
  • 1 jar chopped pimentos, drained (4 ounce jar)
Directions
In a large bowl, combine all of the ingredients and stir gently to combine. Refrigerate mixture overnight. Serve with corn chips.
