Mojito LIme Grilled Lamb Chops Recipe

The classic pairing of lamb and mint gets a new twist with Grill Mates® Mojito Lime marinated lamb chops served with Mint Pesto.

  • 1 package McCormick® Grill Mates® Mojito Lime Marinade
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1 clove garlic, finely chopped
  • 2 pounds bone-in lamb loin or blade chops, trimmed
  • Mint Pesto (optional)

1. Mix Marinade Mix, oil, lime juice and garlic in small bowl. Reserve 2 tablespoons marinade for brushing. Place lamb chops in large resealable plastic bag or glass dish. Add remaining marinade; turn to coat well.

2. Refrigerate 15 minutes or longer for extra flavor. Remove lamb chops from marinade. Discard any remaining marinade.

3. Grill over medium-high heat 3 to 5 minutes per side or until desired doneness, brushing with reserved marinade halfway through cooking. Serve lamb chops with Mint Pesto, if desired.
