Speedy Reuben Casserole Recipe

Luscious layers of hash browns, sauerkraut and corned beef covered with melted Swiss cheese.

Ingredients
  • 1 package (20 ounces) frozen fully-cooked hash browns
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 can (16 ounces) sauerkraut, drained, squeezed dry
  • 1 cup Thousand Island dressing
  • 1 1/2 teaspoons caraway seeds, crushed
  • 1 package (16 ounces) Swiss cheese slices
  • 2 pounds Cook's® Corned Beef, cooked, cut into 1/2-inch cubes
Directions
  • Preheat oven to 450°F. Spray 13x9-inch baking dish with cooking spray. Add hash browns; spread to evenly cover bottom of dish. Sprinkle with salt and pepper. Bake 15 to 20 minutes, or until heated through.
  • Spread sauerkraut over potatoes. Drizzle with dressing; sprinkle with caraway seeds. Top evenly with corned beef and cheese.
  • Bake 15 to 20 minutes, or until casserole is heated through and cheese is melted.
