1/4 cup olive oil
1 small red bell pepper (cut into 1/4
1 small green bell pepper (cut into 1/4 strips)
1 med yellow onion (cut into 1/4 strips)
1 tablespoon minced garlic
1/2 teaspoon kosher salt
6 Premio Italian Sausage (pan roasted; thoroughly cooked)
1 package Barilla spaghetti
In large pot of briskly boiling salted water add pasta broken into thirds. Cook as directed (6-11 min); drain and set to the side.
In a sauce pan, add olive oil. Saute onions and garlic until soft, add peppers and cook until bright green (but not soft).
Slice cooled sausages in half, then into 1/4" strips. Stir frequently to marry flavors. As soon as the onions are soft and clear and peppers are just about soft, add cooked pasta and mix.
Sprinkle with kosher salt, mix and serve.
