1/2 seedless cucumber - peeled and halved lengthwise
1 clove garlic, minced
1/2 teaspoon kosher salt
1 cup plain whole-milk yogurt
2 tablespoons extra-virgin olive oil
1 tablespoon finely chopped dill
freshly ground pepper
1 package Premio fresh or frozen sweet Italian sausages
4 pocketless pita breads or nan, about 8 inches in diameter
romaine lettuce leaves
red onion slices
To make the sauce, combine all of the sauce ingredients in a small bowl. Refrigerate up to 1 day until ready to use.
To make the sandwiches, begin by heating a grill to medium heat and brushing the grate with olive oil.
Grill the sausages for about 12 minutes, turning as needed until cooked through.
Slice the sausages into 2-inch pieces.
Layer the sausage on the pita breads and top them with the lettuce, tomato, onion, and a spoonful of the yogurt-cucumber sauce.
Fold the pitas over the sausage slices and serve immediately, serving the remaining sauce alongside.
