Sausage, Peppers, and Potatoes Recipe

6 Premio sweet or hot sausage (you may wish to use a combination of both)
2 large green bell peppers - cut into long slices
2 red bell peppers - cut into long slices
1 large yellow onion - cut into half moon slices
5 large eastern potatoes - cubed
2 tablespoons ground oregano
1/2 tablespoon ground black pepper
1 large garlic clove - diced
1 cup water
2 tablespoons olive oil
In a frying pan, parboil sausage for about 10 minutes.
While the sausage is cooking, mix the peppers, potatoes, and onion in a large baking dish.
Remove the sausage from frying pan after the 10 minutes of cooking time and add to the baking dish.
Add the oregano and pepper to baking dish and mix.
Add the olive oil and water and mix.
Cook at 375ºF for about 1 hour (until potatoes are soft). You may need to add water from time to time, but be careful not to add too much.
Serve with Italian bread.
You may want to dice the sausage before mixing it in with the other ingredients.
