1 package Premio Sweet Basil Italian Sausage, sliced 1/2 inch thick
1 shallot, chopped
1/4 olive oil
1 clove garlic, chopped
12 ounces sliced mushrooms (Baby Bella), rinsed
3/4 cup white wine
6 roma tomatoes, chopped
10 to 12 basil leaves, chopped
1 package angel hair pasta
Heat large skillet, add olive oil, shallots and garlic. Saute 1-2 minutes on medium heat.
Add Italian sausage, saute 3-4 minutes, until sausage is browned on both sides.
Add mushrooms, white wine and stir.
Add sea salt to taste. Simmer uncovered 1-2 minutes until white wine is reduced to half.
Add roma tomatoes and chopped basil. Cover and simmer 10 minutes.
Prepare packaged angel hair pasta and drain.
Serve sauce over angel hair pasta and top with Parmesan cheese.

(15 oz.) can of crushed tomatoes with Italian herbs
(15 oz.) can of stewed tomatoes with herbs
(28 oz.) can of diced tomatoes with juice
can of tomato paste

Penne with Italian Sausage and Greens
coarsely grated cheese
