16 ounces Premio Cajun Sausage Links
3 slices bacon, diced
1 cup crumbled goat cheese
1 medium ripe tomato, seeded completely and finely diced
1 small onion, finely chopped
3/4 cup mayonnaise, preferably Hellmann's or Best Foods
1 teaspoon dried basil leaves
2 packages refrigerated flaky biscuits - 10 oz tubes
Preheat oven to 350 degrees F.
Brown bacon in a large skillet and remove to a paper towel to drain.
Remove casing from sausage and in a bowl combine with goat cheese, tomato, onion, mayonnaise and basil.
Divide each biscuit in half horizontally and place a half in the cup of a buttered or sprayed mini-muffin cup, pressing gently to fit.
Spoon 1 tablespoon filling into each cup and bake 20 to 25 minutes.
