Cajun Sausage and Goat Cheese Mini Tarts Recipe

  • 16 ounces Premio Cajun Sausage Links
  • 3 slices bacon, diced
  • 1 cup crumbled goat cheese
  • 1 medium ripe tomato, seeded completely and finely diced
  • 1 small onion, finely chopped
  • 3/4 cup mayonnaise, preferably Hellmann's or Best Foods
  • 1 teaspoon dried basil leaves
  • 2 packages refrigerated flaky biscuits - 10 oz tubes
  • Preheat oven to 350 degrees F.
  • Brown bacon in a large skillet and remove to a paper towel to drain.
  • Remove casing from sausage and in a bowl combine with goat cheese, tomato, onion, mayonnaise and basil.
  • Divide each biscuit in half horizontally and place a half in the cup of a buttered or sprayed mini-muffin cup, pressing gently to fit.
  • Spoon 1 tablespoon filling into each cup and bake 20 to 25 minutes.
  • Serve warm.
