3/4 cup plus 2 tablespoons flour
1 cup sugar
6 tablespoons powdered cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1/4 cup canola oil
1/2 cup brewed coffee
1 teaspoon vanilla
:Two 8-inch or 9-inch round cake pans
Grease and flour the bottom and sides of the cake pans. Preheat the oven to 350° F.
Add the flour, sugar, cocoa, baking soda, and salt together in the mixing bowl and stir to combine.
In a separate bowl, combine the egg, buttermilk, oil, coffee, and vanilla; whisk together.
Pour the egg and buttermilk mixture in with the dry ingredients; mix just until evenly combined.
Pour even amounts into each of the prepared cake pans.
Place in the preheated oven and bake for 20 to 25 minutes or until a toothpick poked in the center comes out clean.
Allow to cool for 10 minutes and then remove from the pans and cool on a cooling rack.
Once the cake is completely cooled, place one layer on a cake plate (or other large plate) and spread a layer of frosting on top. Our Fluffy White Boiled Frosting is a perfect match for this cake but you can use any of your favorite frostings.
Place the second layer on top of the frosting, centering the top layer with the bottom.
Spread the remaining frosting evenly over the top and sides of the cake.
To decorate, make swirled peaks all around the sides and on top of the cake.
Cut and serve!
