2 cups boiling water
1/2 cup carrots, sliced
1/4 cup onion, chopped
2 cups potatoes, peeled, diced
1/2 cup celery, chopped
1/2 cup margarine
1/4 cup flour
2 cups milk
2 cups shredded cheddar cheese
1 cup ham, diced
1 1/2 teaspoons pepper
Add water to vegetables and simmer for 10 minutes in a soup pot or Dutch oven. Don't drain.
Make a white sauce from the margarine, flour and milk by first melting the margarine in a medium saucepan; then add the flour and mix together.
Pour in the milk and continue to heat until the mixture boils and thickens, stirring vigorously to get flour incorporated.
Remove from heat and stir in cheese.
Add this cheesy white sauce and the ham to the pot of vegetables and heat together.
