2 pounds frozen cubed hash browns
1/2 cup margarine
16 ounces sour cream
2 1/2 cups shredded Colby Jack cheese
1/2 cup chopped onion
Milk to moisten
Pepper
Parsley
2 cans cream of chicken soup

Preheat oven to 350 degrees F. Grease large baking dish.
Mix hash browns with melted margarine. Add remaining ingredients and mix well. Pour into a prepared baking dish. Bake for 1 hour.
Tip
: You can stir these up ahead of time and then freeze a portion prior to baking. The full recipe makes a lot! You can also add 1 to 2 cups of chopped ham for homemade scalloped potatoes and ham.
Alternative Version
: Instead of frozen potatoes use fresh potatoes sliced very thin.
