Pecan Loaf Recipe

Ingredients
  • 1 pound margarine
  • 2 1/4 cups sugar
  • 6 eggs, separated
  • 1 quart pecans, chopped into small pieces
  • 1 pound candied pineapple, chopped into small pieces
  • 1 pound candied cherries, chopped into small pieces
  • 4 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 bottle lemon extract (2 ounce bottle)
Directions
Bake 250 for 4 1/2 hours.

Cream together margarine and sugar. Add 6 egg yolks that have been well beaten. Add baking powder to the flour and dredge the chopped pecans, pineapple, and cherries in the flour mixture. Add to creamed mixture. Add lemon extract. Beat 6 egg whites until stiff. Fold them into the batter. Bake in a tube pan with a pan of water under the cake pan.
