1 cauliflower head, trimmed, cut into pieces
1/4 cup olive oil
1 tablespoon rosemary - fresh, chopped
2 tablespoons ranch dressing
1/4 cup parmesan cheese - shredded
1/4 cup Asiago cheese - shredded
1 clove garlic - minced
1 green onion - chopped
salt and pepper to taste
1 tablespoon butter
:baking sheet, medium mixing bowl
Preheat oven to 400°.
Spread cauliflower pieces on baking sheet. Sprinkle with about 1/4 cup olive oil. Sprinkle with rosemary, salt and pepper.
Bake in oven 20 minutes, stirring occasionally, until lightly browned and tender.
When done, immediately place in large bowl with sour cream, ranch dressing, cheeses, garlic, salt & pepper, and butter.
Using immersion blender, process all until smooth. You may need to add more ranch dressing if it seems dry.
Season with salt and pepper if needed. Garnish with green onion. Serve hot.
