Pineapple Upside Down Cake 2 Recipe

  • 1/3 cup shortening
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 cup sugar
  • 1 egg, unbeaten
  • 1 1/4 cups sifted flour
  • 1 1/2 teaspoons baking powder
  • 1/2 cup canned pineapple juice
  • 1/2 cup brown sugar
  • 5 slices pineapple
  • 5 maraschino cherries
Combine shortening, salt and vanilla. Add sugar gradually and cream until light and fluffy. Add egg and beat thoroughly. Sift the flour and baking powder three times and add flour alternately with the pineapple juice. Sprinkle brown sugar in bottom of 8x8" greased pan. Arrange pineapple on brown sugar and put cherries in center. Pour batter over all. Bake at 350° 50 to 60 minutes.
