A delicious way to get your veggies, add bread and a green salad for a quick supper. Although blue cheese makes an ideal flavor combination, use a different kind if preferred.

1 pound pasta, any shape
1 pound broccoli
2 ounces blue cheese, crumbled. Use more if desired
2 tablespoons best quality olive oil (optional)
salt, as needed
In a large pot, bring about 3 quarts water with 1 tablespoon salt to a boil. While water heats, break or chop broccoli heads into small pieces. (Peel and dice the stalks for a salad, or save them for another use.)
When water boils, add pasta and cook according to package instructions. About 5 minutes before pasta will be done, add broccoli. Continue to boil until pasta is al dente and broccoli is cooked but not soft.
Drain pasta and broccoli well. Pour into a serving bowl and stir in blue cheese. Drizzle with olive oil, if using. Serve hot.
