South East Missouri Corn Bread Recipe

Ingredients
  • 1/4 cup vegetable shortening (Crisco is best)
  • 2 cups white corn mean (yellow is best)
  • 2 tablespoons all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon Salt
  • 2 cups buttermilk
  • 1 egg (large)
Directions
Melt shortening in 9 inch iron skillet. Brush sides of skillet with shortening. Sift ingredients and blend. Add melting shortening, egg, and buttermilk, and stir well with dry ingredients. Pour batter in hot skillet. Bake in preheated oven at 450° for 20 to 25 minute, or until browned. Cut into wedges and serve with butter.
