Whole Grain Muffins Recipe

  • 3/4 cup Milk
  • 3/4 cup bran cereal
  • 1 egg
  • 1/4 cup vegetable oil
  • 1/4 cup molasses or honey
  • 1/4 cup firmly packed brown sugar
  • 1 cup oats, uncooked
  • 2/3 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt, if desired
  • 1/2 cup raisins
  • 1/2 cup pitted dates, chopped
Combine milk and bran cereal in a medium sized mixing bowl. Add egg, oil, molasses or honey and brown sugar; mix well. In separate bowl, mix flour, baking powder, salt and oats together. Add dry ingredients to egg mixture, mixing just until dry ingredients are moistened. Fold in raisins and dates. Fill 12 greased or paper-lined medium sized muffin cups 2/3 full. Bake at 375° for 15-18 minutes.

Note: These freeze very well. To reheat, place in microwave oven for 30 seconds.
