Mango chutney adds great flavor to the yogurt curry sauce in these sandwiches.

3/4 cup yogurt or sour cream
3/4 cup chutney mango
2 tablespoons lime juice
2 tablespoons curry powder mild
1/2 cup golden raisins
3 chicken breasts boneless, grilled, sliced into bite size pieces
2 green onions chopped
1/2 cup cilantro leaves, chopped
1 cup baby spinach leaves or favorite lettuce leaves
6 sandwich rolls split
salt and pepper to taste
:food processor, medium mixing bowl
In food processor, pulse yogurt, chutney, lime juice and curry until blended but not completely smooth.
Scrape the mixture into medium bowl, add grilled chicken pieces, green onion and cilantro; toss well.
Season with salt and pepper.
Lay spinach leaves on rolls, spoon chicken salad to top and serve.
