1 cup butter at room temperature
2 cups plus 2 tablespoons sugar
2 large eggs
1 teaspoon grated lemon peel
1 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/3 cup milk or buttermilk
4 cups plums - unpeeled, pitted and sliced
1/2 teaspoon cinnamon
: 8 inch round or square glass bakeware dish
Preheat oven to 325Â° F.
Beat butter, one cup of sugar until creamy.
Add eggs one at a time making sure that each is incorporated before adding the next.
Mix in the lemon peel.
In a small bowl, combine the flour, baking powder, salt, nutmeg and cinnamon. Stir until all is blended.
Mix half of the flour mixture into the butter mixture.
Add the milk followed by the rest of the flour.
Stir just until incorporated.
Scrape into a buttered, floured 8 inch glass or ceramic baking pan.
Overlap the plum slices in rows or circles on top of the batter.
In a small bowl, mix the remaiing 2 tablespoons of sugar and cinnamon.
Sprinkle over the plums.
Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.
