1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon ground corriander
1/2 teaspoon sugar
1/4 teaspoon five spice powder
1/4 teaspoon ground cayenne pepper
1 1/2 pounds boneless pork sirloin cut into 1 inch cubes
1 tablespoon olive oil
4 ripe mangoes, cut into 1 inch chunks
6 green onions, white and light green parts only, cut into 1-2 inch lengths
In a medium bowl, mix the rub ingredients with your fingers. Add the pork and mix well to coat thoroughly.
Add the oil to lightly coat. Allow to stand for 10-15 minutes before grilling
While meat is marinating, place 4 skewers into water and allow to soak for up to 20 minutes.
Thread alternately the pork, mangoes, and green onions onto skewers. Leave a little room between each.
Grill over high heat until pork is barely pink, approximately 8-10 minutes, turning once.
Place skewers on platter and serve.
