8 large baking apples*, peeled, cored and sliced (about 3 pounds)
1 tablespoon lemon juice lemon juice
1 1/2 teaspoons vanilla vanilla
1/2 teaspoon cinnamon - ground
1/8 teaspoon nutmeg - ground or a few grinds of fresh nutmeg
1 cup flour - all-purpose
2 cups oatmeal - (uncooked)
1/2 cup brown sugar - packed
1/2 cup sugar, granulated
1/2 cup cranberries - dried
1 teaspoon cinnamon
10 tablespoons butter - unsalted (or margarine), cut into small pieces
:9 inch square or 7 x 11 inch baking dish - deep dish
Preheat oven to 350° F. Coat baking dish with vegetable cooking spray.
Peel, core, and slice apples and place in a large mixing bowl. Toss lemon, vanilla, cinnamon and nutmeg onto apples.
In a separate bowl, mix flour, sugars, oatmeal and cinnamon. Cut in butter until mixture becomes crumbly. Mix dried cranberries into the topping mixture.
In the prepared pan, layer the sliced apples and sprinkle the topping evenly over apples.
Bake 45 to 50 minutes, or until top is golden brown, and apples appear tender. Garnish with whipped topping or ice cream, if desired.
*Use baking apples that do not become mushy when cooked.
