Tomato Potato Sauce Recipe

Ingredients
  • 1 baking potato, large, baked
  • 1 tomato, peeled, seeded and chopped
  • 1 jalapeño, seeded and chopped
  • 4 cornichon, drained and chopped
  • 1/4 cup sweet onion, chopped
  • 3 tablespoons lemon juice, fresh

  • Remove flesh from baked potato and place in food processor.
  • Add remaining ingredients to food processor.
  • Process until smooth.  Serve warm or chilled.
