Tomato Pie 25 Recipe

  • 3 tomatoes, diced
  • salt and pepper, to taste
  • 1/2 cup Mayonnaise
  • 1 1/4 cups shredded sharp cheddar cheese
  • 1 1/4 cups shredded Colby Jack cheese (or your choice)
  • diced onions
  • 1 tablespoon dried chives
  • 1 tablespoon dried basil
  • 1 9-inch pie crust, baked
Place tomatoes between paper towels to absorb some of the moisture (or use colander). In a medium mixing bowl, sprinkle tomatoes with salt and pepper. In a separate medium bowl, combine mayonnaise, cheeses, chives and basil, carefully add tomatoes. Pour mixture into pie crust. Bake uncovered, at 400 for 20-30 minutes, or until browned on top. Serves 8.

This tastes like homemade pizza.
