Fried Sweet Potato Balls Recipe

  • 3 sweet potatoes (2 1/2 lbs) (large)
  • 2 tablespoons butter
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground cinnamon
  • 1 teaspoon Salt
  • 1 cup finely chopped Walnuts
Cook potatoes in salted boiling water over low heat or roast in oven, until fork tender, cool slightly. Peel and mash, add butter, nutmeg, allspice, cinnamon and salt to potatoes and mix until blended, add nuts to mixture. Place 1/2 C flour in a pie plate spoon 1/4 C of potato mixture into flour. Roll to coat with flour and shape into balls (add more flour as needed to coat balls). Heat 3 inches of vegetable oil over moderately high heat (about 375°F), until oil reaches a temperature of 375°F of a deep fat thermometer. Add potato balls and cook until lightly browned on all sides.
