Cranberry Pretzel Sweet Potatoes Recipe

  • 2 cups pretzels, chopped
  • 1 cup fresh or frozen cranberries
  • 1 cup margarine, melted, divided
  • 1 can Evaporated Milk (5 ounce can)
  • 1 teaspoon vanilla
  • 1 cup chopped pecans
  • 1 cup Brown Sugar
  • 2 1/2 pounds sweet potatoes
  • 1/2 cup sugar
In a large bowl, combine pretzels, pecans, cranberries, brown sugar and half of the melted margarine. Set aside. In another large bowl, beat potatoes, milk, sugar, vanilla, and half of the margarine until smooth. Pour into a greased 2 qt. baking dish. Sprinkle with the pretzel mix. Bake, uncovered, at 350° for 25-30 minutes.
