Stir Fried Vegetables Recipe

  • 2 tablespoons vegetable oil
  • 2 1/2 pounds broccoli
  • 3 green onions, sliced
  • 1 stalk celery, sliced
  • 2 carrots, pared and thinly sliced
  • 6 mushrooms, cleaned and cut inch half
  • 1/2 green pepper, cut into large pieces
  • 1/2 zucchini, cut inch half lengthwise and sliced
  • 5 water chestnuts, sliced
  • 1 garlic clove, smashed and chopped
  • Salt and pepper
Heat oil in wok or large frying pan. Meanwhile, separate broccoli into flowerets and split stalks; slice if large. Add broccoli and green onions to wok; stir-fry 2 minutes over medium-high heat. Add celery and carrots; stir-fry 2 to 3 minutes. Season well and add remaining ingredients; continue to stir-fry 6 to 7 minutes. Serve immediately. Serves 4.
