Hearty Lentil Soup Recipe

  • 3 ounces rinsed uncooked lentils
  • 2 cups water
  • 6 ounces pared potatoes, diced
  • 1 each diced onion, celery, and carrots (1/2 cup each)
  • 2 packages instant chicken broth and seasoning mix
  • 2 tablespoons chopped fresh parsley
  • 1 garlic clove, diced
  • 1 bay leaf
  • 1/8 teaspoon ground cumin
Combine lentils and water and bring to a boil. Reduce heat, cover pan and let simmer until lentils are tender (about 20 minutes).

Add remaining ingredients to lentils and stir to combine. Cover and cook on low heat until potatoes are tender (20-30 minutes).
