Apple Walnut Blue Cheese Salad with Raspberry Vinaigrette Recipe

  • Serves: 4
  • 4 cups romaine lettuce, coarsely chopped
  • 1 tart apple (like Granny Smith) (large)
  • 8 tablespoons walnuts, chopped & toasted
  • 4 ounces blue cheese, crumbled
  • 1/4 cup raspberry vinaigrette
  • Vinaigrette
  • 1/2 cup fresh or frozen raspberries, thawed
  • 1 1/2 tablespoons honey
  • 1/4 cup Raspberry vinegar
  • 3/4 cup olive oil or canola oil
Cut apples in slices and arrange on romaine lettuce. Sprinkle toasted walnuts and crumbled blue cheese on lettuce. Drizzle the dressing over all and serve.

VINAIGRETTE: In a blender or food processor puree raspberries and honey. Mix in vinegar thoroughly. With machine running, slowly add oil in a thin stream. Dressing will be thick and smooth.
