Maple Walnut Bran Muffins Recipe

  • 1 cup oat bran
  • 1 cup flour
  • 1/2 cup quick oats
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup powdered sugar
  • 3/4 cup buttermilk
  • 2 tablespoons vegetable oil
  • 1/4 cup Egg Beaters (or any egg substitute for 1 egg)
  • 1/2 cup maple syrup
  • 1/2 teaspoon maple flavoring
  • 1/2 cup Walnuts, chopped
  • 1/2 cup dates, chopped
Mix dry ingredients together. Mix liquids and add to dry mixture. Fold in walnuts and dates. Grease muffin tins and fill three-fourths full. Bake at 325° for 20 minutes. These may not brown on top. Great for helping to lower cholesterol. Can be frozen and reheated in microwave.
