Salsa 114 Recipe

Ingredients
  • 10 cups peeled, chopped red ripe tomatoes (6 lbs)
  • 5 cups seeded, chopped green peppers (2 lbs)
  • 5 cups chopped onion (1 1/2 pounds)
  • 2 1/2 cups chopped hot peppers, seeded (1 pound)
  • 1 1/4 cups cider vinegar
  • 2 tablespoons cilantro, minced
  • 3 cloves garlic, minced
  • 3 tablespoons salt
  • sugar to taste
  • 1 pint corn (optional)
  • 1 teaspoon hot pepper sauce (optional)
Directions
Combine all ingredients in large pot. Bring to boil. Reduce heat and simmer 10 minutes. Pour into hot jars, leaving 1/4 inch head space. Process 15 minutes in a boiling water bath. Yield about 6 pts.
