Oven Peach Butter Recipe

  • 12 cups Peaches (8 lbs)
  • 4 cups water
  • 3 tablespoons lemon juice
  • 1/2 cup honey
Wash, peel, pit and slice peaches. Combined peaches and water in a large saucepan. Cook over medium heat until peaches are soft. stirring frequently, when fruit is tender add lemon juice and honey, stir together mixing thoroughly. Let cool for (2) hours. Put mixture in blender and blend until smooth. Divide and put into two 9 X 13 baking dishes. Bake uncovered for (1) hour at 350. Stir every (15 - 20) minutes until desired thickness has been achieved. Ladle into very hot sterilized jars leaving 1/4" head space. Wipe rims and threads with a clean damp cloth. Tighten rings and lids. Place on a towel and let stand over night to cool. Check seals and store in a cool dry place. Shelf life is one year and, refrigerator life is six months.
