Crustless Broccoli Cheddar Quiche (Gluten Free) Recipe

  • 1 tablespoon unsalted butter
  • 1 onion, thinly sliced (medium)
  • 3 cups small broccoli florets, steamed, cooled and coarsely chopped
  • 1 cup grated cheddar cheese
  • 5 eggs (large)
  • 1 cup milk
  • 3/4 teaspoon salt
  • 1/8 teaspoon fresh ground black pepper
  • 1/3 cup toasted, chopped walnuts (optional)
Preheat oven to 300°. Melt butter in medium skillet over medium heat and sauté onion until lightly browned. Set aside to cool. Combine broccoli, cheese and onions in a buttered 9 in glass pie plate. In a bowl, whisk together eggs, milk, salt, and pepper and pour into the pie plate. If desired sprinkle with the nuts and bake until the eggs are set and the top is lightly browned, about 50 minutes. Cool 10 minutes before slicing and serving.
