Shrimp & Rice Jambalaya Recipe

  • 4 slices bacon, diced
  • 1 onion, diced (medium)
  • 1/2 green bell pepper, diced (medium)
  • 2 cups chicken broth
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 package frozen shrimp, cooked and shelled (10 ounce pkg)
  • 1 cup ham, cooked and diced
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water
  • Salt
  • Pepper
  • Hot cooked rice
Cook bacon until crisp. Remove bacon and cook onion and green pepper in bacon grease for 5 minutes. Add chicken broth, ketchup and brown sugar. Simmer, covered for 15 minutes. Cut shrimp into bite sized pieces. Add with bacon and ham to first mixture. Heat well. Thicken with blended cornstarch and water. Serve over rice.
