Italian Meatloaf Roll up Recipe

  • 1 1/2 pounds ground beef
  • 1 egg
  • salt
  • pepper
  • 1/2 cup onions, chopped fine
  • 1/3 cup tomato sauce or ketchup
  • 1/3 teaspoon oregano
  • 3/4 cup cracker crumbs
Mix all ingredients together and press down hamburg mixture on 10 x 12 inch piece of wax paper. Sprinkle with 2 cups mozzarella cheese and roll up like a jelly roll. Bake at 350° for 1 hour, drain off grease. Pour 2 (8 oz.) cans of tomato sauce and 2 or 3 slices of cheese (could also just use more mozzarella if desired) on top of loaf and bake another 15 minutes or until done.
